1kg boneless, skinless chicken breast, cubed

2 tbsp plain yogurt (tenderizes the meat)
π§ Aromatics & Base:

1 large onion, finely chopped
β
4 cloves garlic, minced
β
1-inch piece ginger, grated
β
1-2 fresh green chilies, slit lengthwise (optional for heat)

Curry Sauce:

1 tbsp ghee (or oil)
β
1 can (400g) chopped tomatoes, blended with 2 tbsp tomato paste

200ml water (adjust for consistency)
β
1 tbsp honey (balances acidity, optional)

2 tbsp MDH Chicken Curry Masala

1 tsp cumin seeds (jeera)
β
2-3 green cardamom pods, lightly crushed
β
1 tsp turmeric (haldi)
β
1 tsp chili powder (adjust to taste)

1.5 tsp salt (adjust to taste)

1 tsp black pepper

2 medium carrots, diced small (mild sweetness & texture)

70g spinach, chopped (mixes in well for extra greens)

Instructions
Step 1
In a bowl, mix chicken with yogurt, 1 tsp MDH masala, 1 tsp lemon juice, and a pinch of salt.
Step 2
Let it marinate for 30 mins (or overnight in the fridge for better flavor).
Step 3
Heat 1 tbsp ghee (or oil) in a large pan over medium heat.
Step 4
Add cumin seeds and cardamom podsβlet them sizzle for 30 sec.
Step 5
Add chopped onionsβcook for 5-7 mins until soft and golden.
Step 6
Stir in garlic, ginger, and chiliesβcook for 1 min until fragrant.
Step 7
Add turmeric, 2 tbsp MDH Chicken Curry Masala, and chili powderβstir for 30 sec.
Step 8
Pour in blended tomatoes + tomato paste + saltβsimmer for 5-7 mins until oil starts separating.
Step 9
π₯ Step 3: Cook the Chicken

Add marinated chickenβstir to coat in the sauce.
Step 11
Pour in 200ml water, add honey (if using), and stir.
Step 12
Cover and simmer on low heat for 8-10 minsβcheck that chicken is tender.
Step 13
Stir in butter or cream for richness.
Step 14
Optional - Add carrots and simmer for 5 more minutes.
Step 15
Optional - Stir in spinach and let it wilt into the curry.
Step 16
Sprinkle garam masala and fresh coriander before serving.
