Step 1: Making Gochujang Mayo Sauce: In a bowl, mix 3 tablespoons of mayonnaise, ½ tablespoon of gochujang, ½ tablespoon of honey, and 1 teaspoon of minced garlic. This sauce is perfect for dipping and enhances the flavor of the quesadilla!

Step 2: Bulgogi Marinade: Finely chop 2 scallions. In a bowl, add 1 tablespoon of soy sauce, ½ tablespoon of sesame oil, 1 teaspoon of minced garlic, 1 tablespoon of sugar, and a bit of ginger. Grate a little onion into the mixture. Lastly, add a pinch of pepper and mix well.

Step 3: Assembling: Melt a little butter in a pan over low heat. Place one tortilla in the pan and first add 2 slices of cheese. Add a generous amount of cooked bulgogi. Add a suitable amount of mozzarella cheese. Finally, sprinkle some chopped scallions on top.
Step 4
Step 4: When the bottom of the tortilla turns golden brown, fold it in half and cook slowly over low heat until the cheese is completely melted. Once both sides are golden brown and crispy, transfer the quesadilla to a plate. Use a knife or a pizza cutter to cut the quesadilla into three pieces. And when dipped in the gochujang mayo sauce, it’s just amazing!
