Instructions

Cook Chicken

Step 1
In a large pan heat oil. Saute onion, then add chicken. Season with salt and pepper and cook until no longer pink.

Aromatics

Step 2
Clear space in pan and add in garlic and curry powder and cook until fragrant, use more oil if needed.

Rice/Liquids

Step 3
Add in rice, chicken broth, coconut milk, diced tomatoes, tomato paste and sugar. Bring to boil, cover with lid, lower to simmer and reduce. Add water as needed.
