Plantains

Step 1
Bring a large pot of water to a boil.

Peel and cut the plantains into 4 pieces each.

Boil the plantain pieces for 5-7 minutes, until golden.

Lay out a large sheet of parchment paper on the counter. Remove the boiled plantains from the water and spread them out on the parchment paper.

Lay another large sheet of parchment paper across the top of the plantains. Use a tray, pan, pot or cutting board to press down on the plantains until they are roughly 1/2 inch thick. Throw out the top sheet of parchment paper.

Place a large pan on the stove over medium heat. Add 1/4 - 1/2 cup of coconut oil, enough to fry the plantains. Prepare a plate with 2-4 sheets of paper towels (to place the cooked plantains).

Place 3-4 plantains into the oil at a time. Cook for 1-2 minutes per side, until they start to brown. Remove from the oil and place aside on plate and paper towels. Add additional coconut oil to the pan as needed.
