Instructions

Step 1
Cut off and discard the root ends of the bok choy. Thinly slice crosswise. Place in a large bowl.

Form & cook the patties

Step 2
Combine the ground chicken, ginger, breadcrumbs, and half the sesame oil. Season with salt and pepper. Gently mix together to combine. Form mixture into 4 patties.

In a large skillet, heat 1 tbsp olive oil over medium high heat.
Step 4
Add the patties and cook 5 to 7 min per side, until browned and cooked through.
Step 5
Leaving any browned bits (or fond) in the pan, transfer to plate.

Dress the bok choy

Step 6
While the patties cook, add the mirin and remaining sesame oil to the bowl of bok choy. Drizzle with olive oil and season with salt and pepper. Toss to coat. Season as needed.

Toast the buns

Step 7
Add the buns, cut side down, to the pan of reserved fond. Toast on medium high 30 seconds to 1 minutes, or until lightly browned. Transfer to work surface.

Finish and plate

In a small bowl, combine the hoisin sauce and mayonnaise. Season with salt and pepper to taste.

Step 9
Evenly divide mayo among cut sides of the buns. Top each bun bottom with a patty, then some dressed bok choy. Finish with bun top.
