Dairy Free Keto'vore Cheesy Eggs Porridge

When grits or other grain porridge was your go to comfort food and you want an alternative, you don't stop until you create a solution. This one is creamy, it's ketovore and it's comforting and although it's nongrain, it works, and I love it! And I love it, I'm thinking someone else may love it too. Here's saying goodbye grits forever.

Instructions

Step 1
Heat and melt the coconut oil in a skillet.
Step 2
Pour the eggs into the heated pan with the melted oil and scramble into small curds. Set aside.
Step 3
In a medium sauce pan, pour in the milk. Once milk is hot, add the cheese in 2- 3 increments, stirring from the bottom of the sauce pot, immediately once melted and sauce is bubbly, turn off and remove from heat.
Step 4
Now add the scrambled eggs or egg whites, folding them into the melted cheese porridge. Now gently toss in the melted ghee and dish into each serving bowl with a pretty garnish and serve hot. Top with your favorite shrimp recipe or other usual grits topping keto style and serve, or serve just as it is. Enjoy!
