Aloo Soyabean Curry is a simple, hearty dish made with potatoes and soya chunks simmered in a lightly spiced onion-based gravy. Instructions

Step 1
Soak soya chunks in hot water for 10–15 minutes. Squeeze out water and keep aside.
Step 2
In a pan, heat oil. Add cumin (if using), then sauté onion till golden. Add ginger, sauté for a minute.
Step 3
Add turmeric, chili powder, and salt. Stir well. Add tomato now if using and cook till soft.
Step 4
Mix in potatoes and soya chunks. Stir to coat everything with spices.
Step 5
Add 1–1.5 cups water. Cover and simmer till potatoes are soft (15–20 mins).
Step 6
Garnish with coriander (optional). Serve with rice or roti.
