Step 1
Heat oil in pan over medium heat
Step 2
Fry mushrooms and diced potato
Step 3
Crack eggs over the mushrooms and potatoes and cook gently, leaving the yolks unset.
Step 4
In a bowl, combine the kale and tomatoes, season with tthe nutmeg.
Toss, then add to egg mixture.
Step 5
Crumble the bacon and scatter on top of the egg mixture.
Step 6
Cook a few minutes more, then serve on warm plates.
