Instructions

Step 1
Heat oil in pan over medium heat

Fry mushrooms and diced potato

Crack eggs over the mushrooms and potatoes and cook gently, leaving the yolks unset.
Step 4
In a bowl, combine the kale and tomatoes, season with tthe nutmeg. Toss, then add to egg mixture.

Crumble the bacon and scatter on top of the egg mixture.
