Mise en Place
Step 1
Chop carrots and potatoes for mash.
Step 2
Set water to boil for carrots and potatoes & blend spices
Step 3
Dice tofu. Slice pak choi, radishes, and spring onions. Mince garlic.
Cooking - Boil Mash Base
Step 4
Boil potatoes and carrots in salted water (15–18 min).
Step 5
Add spinach in the last 3 minutes to wilt.
Cooking - Fry Tofu and Sausage
Step 6
Heat oil in a large skillet or wok.
Step 7
Add tofu and cook until golden on all sides (8–10 min).
Step 8
Add sausage and bake until browned.
Step 9
Add garlic and spring onion whites, cook 1 min.
Cooking - Stir-Fry Veggies
Step 10
Add pak choi and radish to the pan. Stir-fry 3–4 min.
Step 11
Add soy sauce and spice blend, toss to coat.
Cooking - Finish Mash
Step 12
Drain mash veggies, mash with salt, pepper, and a splash of oil or butter.
Step 13
Plate mash as a base, top with the tofu-sausage stir-fry.
Step 14
Garnish with spring onion greens.
