Instructions
Step 1
Cut broccoli into florets and steam them until just barely fork tender
Step 2
Dump broccoli into bowl and shock with cold water to stop cooking. Set aside.
Step 3
Cut chicken thighs into large chunks (just over 1")
Step 4
Season the chicken with salt and coat with cornstarch until the pieces are no longer wet to the touch
Step 5
Get a generous puddle of oil in your pan and drop your chicken in.
Note: Don't scrape the chicken off your cutting board, please gently sprinkle it on

Stir fry chicken. As it cooks, mince your garlic and ginger and shred 2-3 tbsp of orange zest off
Step 7
Flip chicken, if you haven't already, and add garlic and ginger. Let cook for 1 min
Step 8
Push chicken to one side and deglaze pan using your soy sauce, vinegar, sugar, and orange juice to taste
Step 9
Once sauce is well mixed it will probably won't be coating anything so start dropping your broccoli into pan without letting it drip for too long
Step 10
At this point, add red pepper flakes if you choose to do so
Step 11
If the sauce is too liquid-y now, simply sprinkle some cornstarch in and stir aggressively until fully mixed
Step 12
Turn off the heat, add the orange zest, and let sit without stirring the zest in while you clean up and allow food to cool down
Step 13
When your space is clean, and your food has cooled down, the sauce should have thickened up some more and come down to an edible temperature. At this point you may now stir one final time until the orange zest is evenly distributed
