Instructions

Step 1
1. Mix the seasonings: In a small bowl, combine flour, chili powder, red pepper flakes, cumin, garlic powder, onion powder, oregano, paprika, MSG, and black pepper.

2. Brown the ground beef: Preheat a large skillet over medium heat. Spread the ground beef evenly in the pan and press it down firmly. Cook undisturbed for 8–12 minutes until a deep brown crust forms.

3. Flip and crumble the beef: Flip the beef slab, then begin crumbling it into small pieces. Cook another few minutes until evenly browned.

4. Add gelatin to broth: While beef cooks, sprinkle gelatin over the bone broth and let it bloom (absorb liquid).

5. Season the beef: Add the seasoning mix to the crumbled beef and stir for 30 seconds to toast the spices.

6. Add broth, tomato paste, and simmer: Pour in the gelatin-broth mixture and tomato paste. Simmer for 10–12 minutes, stirring occasionally, until the mixture thickens and reduces.

7. Cool and add yogurt: Remove from heat. Let the beef cool for 10 minutes, then stir in Greek yogurt for creaminess.

8. Prepare the tortillas: Lay out 6 soft taco tortillas. Spread 2 tbsp cheddar cheese dip in the center of each, about the size of a street taco tortilla. Spread 2½ tbsp refried beans onto each street taco tortilla, then press them bean-side down onto the cheese-covered soft tortilla.

9. Fill and wrap: Add ¼ cup beef mixture and 1 tbsp shredded cheddar on top. Fold in the sides and roll tightly into a burrito.

10. Toast the burritos: Heat a skillet over medium heat and toast each burrito seam-side down until golden and crispy, 2–3 minutes per side.
