Mildly Spiced Chili

Ingredients
6 servings
1 x 16 ozcan mild chili pinto beans
with its sauce, used the vegetable broth by pouring into this can to get all the flavors out
1 x 16 ozblack bean can
rinsed - fun fact rinsing beans helps reduce some of the starches that cause gas

1 ½ cupsreduced sodium vegetable broth
or enough to get the liquid to almost cover everything

½ tspyellow curry powder

½ tspcumin powder

¼ tspblack pepper

2 Tbspminced garlic

1red onion
diced

2jalapenos
diced, with its seeds, we find sauteing them helps cook out some of the spice depending on how long it's cooked but it'll still be somewhat spicy in this recipe

2 stalkscelery
diced

15baby carrots
chopped, it's what we had in the fridge, could have easily shredded carrots instead, it'll provide some sweetness, carrabbas uses carrots in their spaghetti sauces

2 tspginger paste

½ tsppaprika powder

¼ tspgarlic powder

½ tsponion powder

½ cupmedium salsa

⅛ tspcinnamon powder
Instructions
Step 1
Heat olive oil to medium heat in a large pot
Step 2
Add chopped jalapenos with its seeds, celery, carrots, and red onion and cook on medium for about 10 to 15 minutes, I just threw in the vegetables as I was chopping them
Step 3
Add the 2 tbsp minced garlic and saute for a minute
Step 4
Add in both cans of beans
Step 5
Heat to boil, might need to turn the heat to medium high heat and once it boils, turn to simmer on low and now you'll add the curry, cumin, paprika, black pepper, ginger paste, medium salsa, cinnamon, garlic and onion powders
Step 6
Cover and simmer on low for at least 10 minutes, or however long it takes to cook your brown rice, but the longer the better! Instant brown rice will take about 15 minutes
Step 7
Enjoy with Greek yogurt (as a substitute for sour cream), shredded cheese, and brown rice
