Instructions

Step 1
Slice your veggies (I used peppers, onion, courgette and mushroom), tear firm tofu into chunks, drizzle with olive oil and roast everything, stirring every ten minutes, until cooked.
Step 2
Put 1 tbsp soy sauce, 1 tbsp olive oil, 2/3 tbsp of rice vinegar, 2 tbsp maple syrup, 1 tsp garlic powder, 1 tsp Aleppo chilli flakes, 1 tsp cornflour and some freshly ground black pepper into a jar and shake it up.
Step 3
Stir the sauce into the tofu and veggies and roast until the sauce has thickened a bit.
Step 4
Meanwhile, I cooked some rice in the Instant Pot
