Instructions
Step 1
Cook noodles according to package instructions and set aside. Cut the scallion, garlic and ginger. Juice the lime and keep some of the zest.
Step 2
Stir fry the minced chicken for about 6 minutes. Add in the garlic and ginger and fry for a few more minutes until aromatic. Add in one tablespoon of curry paste.
Step 3
In the meantime, wok the scallion and spinach for about 3 minutes on high heat until the spinach is wilted. Add salt and pepper to taste.
Step 4
Add 3 tablespoons of curry paste and the coconut milk to the wok and mix. Heat to boiling point. When boiling, add in the noodles and heat for about 2 minutes. Add in the soy sauce, sugar and lime juice and zest.
