Sheriff Don's Coney Dog Sauce

The first 'coneys' appeared in 1914 in Ft. Wayne, IN and/or Jackson, MI (still hotly disputed). For sure, they DID NOT first appear in New York!
The initial coney vendors were Greek immigrants and thus named their product after landing in New York and visiting the very memorable Coney Island amusement park.
The original recipe called for beef hearts & kidney meat. However, those meats are rarely sold over the counter today, so an ideal substitute is all meat hotdogs. It is also likely the sidewalk cart vendors would have ground up their leftover hotdogs and added those to the next day's recipe, which gives the sauce it's distinctive deli-meat flavor.

2 lbsground beef chuck

10hotdogs
all meat

2yellow onions
finely diced

3 Tbsbacon grease

4 Tbsbutter
real

⅓ cupBloody Mary mix

12 ozbeef broth
9 oz if using bloody mary mix

6 oztomato paste

4 Tbsminced garlic

2 Tbsyellow mustard

1 Tbscider vinegar
optional

3 Tbspaprika

3 Tbschili powder

3 Tbscumin

2 Tbscane sugar

1 Tbscelery seeds

½ tspallspice

cayenne pepper flakes

1 tspblack pepper

1 tspsea salt
Instructions
Step 1
Add all ingredients, except hotdogs, to 5-qt Dutch Oven
Step 2
Use a meat masher to chop up meat and then a hand wand mixer to blend. Cook for 30-mins
Step 3
Place hotdogs in blender with some broth and blend
Step 4
Add blended hotdogs to Dutch Oven and simmer 30-mins or more
Step 5
Salt & Pepper to taste
