Instructions

Step 1
Cook quinoa according to package directions. Allow to cool enough to handle with you hands.
Step 2
I'm a large bowl, peel and grate carrots and onion. Grate zucchini (be sure to retain the liquid).
Step 3
Add cooked quinoa and all remaining ingredients to the bowl. Mix will with your hands until everything is evenly incorporated.
Step 4
Great an electric griddle to 350 or a large skillet on the stove on medium. Lightly oil the griddle or pan.
Step 5
Shape small handfuls of the mixture into fritters (I make them about 3-inches in diameter). Fry for a few minutes in each side until browned.
