Instructions

Step 1
1. Roast the sweet potato. 2. Add all ingredients to a food processor and blend until smooth. 3. Let the batter rest for 2–5 minutes to thicken slightly. 4. Heat a non-stick pan over medium heat. 5. Pour in the batter to make the pancakes.
