1onion
medium, diced

2cloves garlic
minced

1carrot
large, sliced

10 ozPeas frozen

2celery stalks
sliced

1 tspground turmeric

½ tspground ginger

½ tspground cumin

¼ tspground black pepper

6 cupschicken broth

2 cupschicken
cooked, shredded

1 cupkale
chopped, or spinach

½ cupquinoa
cooked, or rice, optional

1lemon juiced

salt
to taste

fresh parsley
for garnish
Instructions
Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
Step 3
Add the sliced carrot and celery, cooking for another 5 minutes until they begin to soften.
Step 4
Stir in the ground turmeric, ginger, cumin, and black pepper.
Step 5
Cook for about 1 minute until the spices become fragrant.
Step 6
Pour in the chicken broth and bring the mixture to a boil.
Step 7
Reduce the heat and let it simmer for about 10 minutes.
Step 8
Add the shredded cooked chicken and chopped kale or spinach to the pot.
Step 9
If using, add the cooked quinoa or rice.
Step 10
Simmer for another 5-10 minutes until the greens are wilted and the soup is heated through.

Stir in the lemon juice and add salt to taste.

Garnish with fresh parsley before serving.
