Instructions
Step 1
Combine Quinoa & water. Bring to boil, reduce heat, cover and simmer 15 minutes or until water is absorbed. Remove from heat, let sit covered 5 minutes. Fluff with fork.
Step 2
Large bowl - combine cooled Quinoa, beans, pineapple, red bell pepper, red onion, & cilantro.
Step 3
Small bowl- whisk lime juice, oil, cumin, salt and pepper
Step 4
Pour dressing mixture over salad, toss gently
Step 5
Fridgerate 30 min
Step 6
Serve
