Ingredients
6 servings

1.5Chicken thighs

2 Tbspolive oil

1 ½ tspchili powder

1 tspcumin

1 tspsmoked paprika

1 tspsalt

½ tspblack pepper

2 Tbspcilantro
chopped

2poblano peppers
diced

1white onion
small

6corn tortillas

2 cshredded monterey jack cheese

lettuce
shredded, to serve

lime wedges
to serve
Avocado Jalapeño Salsa
Instructions
Step 1
Add avocado, jalapeños, water, cilantro, vinegar and salt to a food processor and blend until smooth. Store in fridge.
Step 2
Pre-heat oven to 400
Step 3
Add chicken, olive oil, chili powder, cumin, paprika, salt, pepper, garlic, cilantro, poblanos, and onion to a large bowl and toss until fully coated.
Step 4
Arrange chicken and veggies to a baking sheet, and bake until chicken is cooked through.
Step 5
Shred chicken, return to veggie mix.
Step 6
Turn oven up to 425
Step 7
Lay out tortillas, coat with oil. Flip and bake for 2-3 minutes.
Step 8
Layer tortillas with cheese and chicken/veggie mix and more cheese. Fold over and bake for 15 minutes.
