Instructions

Step 1
1. Mix sauce ingredients in a small bowl. 2. Soak vermicelli in boiling water according to packet instructions. Drain and set aside. 3. Heat 1 tbsp oil in a wok or pan. Pour in eggs, cook into a thin omelette, then roll up and slice. Set aside. 4. Add remaining 1 tbsp oil to the pan. Sauté onion, garlic, and ginger for 2 minutes until softened. 5. Add noodles and sauce. Toss well. 6. Add sliced omelette and chili (if using). Stir-fry for 1–2 minutes until everything is hot and coated in sauce.
