400g5% fat beef mince
split 250g for Nath
3 Tbsplight soy sauce
for you
1 Tbspdark soy sauce
2 Tbspmirin
2 Tbspteriyaki sauce
1 tspsesame oil
2 clovesgarlic
1 tspginger
Black pepper
300gjasmine rice
cooked, or basmati, cold
150gfrozen peas
150gmixed bell peppers
1carrot
2spring onions
2eggs
1 tspsesame oil
optional for the rice
Instructions
Step 1
Cook the beef:
Fry garlic & ginger in a little oil (or spray) for 30 secs → add beef mince, breaking it up.
Once browned, stir in soy sauces, mirin/rice vinegar, teriyaki, black pepper. Simmer 2–3 mins.
Step 2
Cook the rice & veg:
In a large pan/wok, add a little oil or spray. Fry carrots, peppers, and peas until softened (3–4 mins).
Push to one side, crack eggs in and scramble until just set.
Add cold rice, sesame oil, and a splash more soy sauce — stir-fry until hot.
Step 3
Combine & serve:
Stir beef into rice mix until evenly distributed.
Taste and adjust seasoning — a squeeze of lime or extra black pepper at the end makes it pop.
