Ingredients

2 tablespoonlong-grain white rice
300 gramsground chicken
⅜ teaspoonwhite granulated sugar
½ tablespoonfish sauce
1.5limes

4spring onions

3 teaspoonred chili flakes
1 cupbasmati rice
1cucumber

Instructions
Step 1
Step 1. Heat a frying pan over low heat and add the uncooked white rice (no oil). Stir continuously, toasting until it turns golden yellow and smells like popcorn, about 15 minutes. Let cool slightly, then grind into a coarse powder using a mortar and pestle or blender. Set aside.

Step 2. In a small saucepan, cook the ground chicken over medium heat, breaking it into small pieces, until fully cooked. For richer flavor, keep the cooking juices; for a lighter version, drain the juices and add a splash of water. Remove from heat.

Step 3. Add 1 heaping tablespoon of the toasted rice powder and 1/2–1 tablespoon of chili flakes to the chicken.

Step 4. Add sugar, fish sauce, and lime juice. Stir to combine.

Step 5. Add sliced shallots, minced spring onions, chopped cilantro, and mint leaves. Stir well so all the flavors coat the meat.

Step 6. Taste and adjust seasoning with more fish sauce, lime juice, or chili flakes if desired.

Step 7. Serve with fresh cucumber slices, iceberg lettuce, and cooked basmati rice, with eggs on the side if desired. Garnish with extra mint leaves.
