I came across this quick and easy lo mein recipe on Facebook and decided to give it a try—but of course, I couldn’t resist adding my own little twists. The base recipe was simple, flavorful, and perfect for a busy weeknight, but my tweaks gave it an extra punch of flavor and texture. With tender noodles, crisp veggies, and a savory-sweet sauce that comes together in minutes, this dish is now a go-to in my kitchen. Best of all, it’s ready in under 20 minutes and tastes even better than takeout!

Ingredients
3 servings
0.5 lbspagetti
cooked for 10 minutes and cooled

1 Tbspgarlic

½ tspginger paste
8 oztri colored Cole slaw mix

4 ozmushrooms

3 Tbspsoy sauce

2 Tbsphoisin sauce

2 Tbspsesame oil
divided

½ tsppepper

1 Tbspbrown sugar

Instructions
Step 1
Cook noodles for 10 minutes and set aside to cool
Step 2
In a separate bowl wisk together soy sauce, hoisin sauce, 1 tbsp sesame oil, brown sugar and pepper. Set aside.
Step 3
In a frying pan or wok on medium high heat add 1 tbsp sesame oil. Add garlic and ginger paste. Cook until fragrant about 1 minute. Add mushrooms and stir fry until mushrooms are cooked. Add slaw mix and cook until wilted about 3 minutes.
Step 4
Once veggies are cooked add spagetti and sauce and stir fry for another minutes or two or until everything is well combined. Top with your choice of protein.
