Teriyaki Salmon with Asian Greens

Instructions

Step 1
Slice or grate/crush the ginger and garlic finely.
Step 2
Place the ginger and garlic in a small bowl and mix with the tamari, stevia, mirin, and 1/4 tbsp olive oil.
Step 3
Place the salmon fillet in a bowl, pour the dressing over it, and season with salt and pepper. Cover and set aside in the fridge to marinate for at least 20 minutes, or up to 2 hours.
Step 4
Heat a large frying pan on medium heat and add another 1/4 tbsp of oil. When hot, add the salmon, skin side down, reserving the marinade. Cook for 2 minutes, then pour in the reserved marinade and cook for a further minute or so, until the salmon fillet is opaque halfway up the sides.
Step 5
Flip fillet over and cook for 3-4 minutes, basting with the sauce so that the salmon is well coated. Add a splash of water if the sauce is too thick.
Step 6
Serve with steamed veggies drizzled with another ½ tosp olive oil and chilli (optional), then spoon over the leftover teriyaki sauce that's left in the pan!
