Quinoa Pizza Crust

Pumpkin & veggie pizza: quinoa crust + roasted pumpkin slices + roasted zucchini + dairy-free ricotta + basil + balsamic drizzle
Ingredients:
1 cup quinoa
1/4 cup water
1 tsp baking powder
1 tsp Italian seasoning
Sea salt and black pepper, to taste
Directions:
Step #1: Soak the quinoa in water for at least 8 hours or overnight. Then, rinse and drain.
Step #2: Preheat your oven to 425°F and line a baking sheet with parchment paper.
Step #3: Blend the pre-soaked quinoa with 1½ cup of water, baking powder, Italian seasoning, and salt until smooth.
Step #4: Spread the mixture onto the prepared baking sheet, shaping it into a pizza crust. Bake for 15-20 minutes or until the edges are golden brown and the crust is firm. Add your favorite toppings and bake for an additional 10 minutes.
