Instructions

Step 1
In a small mixer bowl combine flour, sugar, baking powder, and salt.
Step 2
Add remaining crepe ingredients except 5 ml (1 tsp) butter.
Step 3
Beat at medium speed, scraping bowl often, until smooth (1 to 2 min.).
Step 4
Melt 5 ml (1 tsp) butter in a 15 to 20-cm (6 or 8-in) frying pan until sizzling.
Step 5
For each of 6 crepes, pour about 50 ml (4 tbsp) batter into frying pan; immediately rotate frying pan until thin film covers bottom.
Step 6
Cook over medium heat until lightly browned (2 to 3 min.).
Step 7
Run wide spatula around edge to loosen; turn.
Step 8
Continue cooking until lightly browned (2 to 3 min.).
Step 9
Place crepes on a plate, placing waxed paper between each.
Step 10
Cover crepes; set aside.
