Step 1
Heat a little oil in a pan over medium heat. Sauté the shallot until translucent. Add the garlic and ginger and fry briefly until fragrant.
Step 2
Add the coconut milk and peanut butter. Stir and bring to the boil, making sure the peanut butter dissolves completely.
Step 3
Stir in the ketjap manis, cumin, and sambal. Let simmer on low heat for a few minutes until the sauce thickens slightly.
Step 4
Taste and adjust seasoning with more ketjap or sambal if desired.
Step 5
Serve warm, garnished with fresh coriander if you like.
