Instructions

Step 1
In a large bowl, mix the bread flour, whole wheat flour, and salt.

In a separate bowl, mix water and maple syrup, then add the sourdough starter, stirring until combined.

Combine the wet and dry ingredients, and mix until no dry flour remains. Cover and let rest for 30 minutes.
Step 4
Add the chopped pecans and fold into the dough until evenly distributed.
Step 5
Cover the dough and let it rise at room temperature for 3 to 4 hours, folding every 30 minutes.
Step 6
Shape the dough into a loaf and place it in a floured proofing basket. Let it rise for another 2 hours.
Step 7
Preheat the oven to 450°F (230°C).
Step 8
Carefully transfer the loaf to a parchment-lined baking dish. Score the top with a sharp knife.
Step 9
Bake for 25 minutes with the lid on, then remove the lid and bake for another 20-25 minutes until golden brown.
Step 10
Let the loaf cool on a wire rack before slicing.
