Ingredients

1 Tbspolive oil
200gtempeh
crumbled
1 Tbspnutritional yeast
0.5red capsicum
diced
50gmushrooms
sliced
1 ringpineapple
chopped
1clove garlic
minced
2eggs
beaten
1spring onion
sliced, to serve
coriander
to serve
Peanut sauce
Instructions
Step 1
Heat oil in frying pan over medium heat.
Step 2
Add tempeh and nutritional yeast, frying for several minutes.
Step 3
Mix sauce ingredients in a small bowl, adding water to loosen if required.
Step 4
Add veggies and garlic, then fry for a further couple of minutes before adding the eggs, scrambling them gently.
Step 5
Once cooked divide between plates. Top with with the peanut sauce and some spring onion and coriander.
