1red bell pepper

1 lbground beef
turkey, or chicken, or plant-based meat alternative

2tart green apples
like Granny Smith, peeled and diced

2 x 15 ozcans fire-roasted tomatoes
with juices

1 x 15 ozcan black beans
drained and rinsed

1 x 15 ozcan kidney beans
drained and rinsed

1 cupchicken broth
or vegetable

2 Tbsptomato paste

2 tspground cumin

1 tspchili powder

½ tspsmoked paprika

¼ tspcayenne pepper
optional, for extra heat

salt

1juice of lime

fresh cilantro
chopped, for garnish
Instructions
Step 1
1. Sauté aromatics: In a large pot or Dutch oven, heat olive oil. Add onion, garlic, jalapeños, and bell pepper. Cook until softened (5–7 minutes). 2. Brown protein: Add ground meat and cook until browned, breaking it up with a spoon. 3. Add apples: Stir in the diced green apples and cook for 2–3 minutes so they start to soften. 4. Spice it up: Add cumin, chili powder, smoked paprika, cayenne, salt, and pepper. Stir well to coat everything in the spices. 5. Build the chili: Stir in tomato paste, canned tomatoes, beans, and broth. Bring to a simmer. 6. Simmer: Reduce heat and let cook uncovered for about 30–40 minutes, stirring occasionally. The apples will break down a little but still leave chunks for texture and tartness. 7. Finish: Taste and adjust seasoning. Stir in lime juice before serving. 8. Serve: Top with cilantro, avocado slices, or even shredded sharp cheddar.
