Pesto Couscous with Fried Feta

Ingredients

Satay sauce
Instructions
Couscous
Step 1
Cook couscous in a saucepan with the water until it has all been absorbed.
Step 2
Remove from the heat and stir through the pesto until all combined. Set aside until serving.
Veggies
Step 3
Heat oil over medium heat in a frying pan. Add in the shallots and cook for 2-3 minutes.
Step 4
Add in the carrot and cook for a further 3-4 minutes.
Step 5
Add in the greens, allowing to wilt and removing from the heat then setting aside until serving.
Sauce
Step 6
Mix all ingredients in a small bowl until combined.
Feta
Step 7
Mix the salt and black pepper and garlic powder through the cornstarch in a shallow bowl. Toss the feta slices in this mixture and coat on all sides.
Step 8
Heat oil over high heat in a frying pan. Add the feta and fry for 1-2 minutes on each side until brown and crispy.
Serving
Step 9
Divide the couscous between bowls. Add in the veggies and top with the feta. Drizzle over the satay sauce and enjoy!
