Step 1
Vegetable Stir Fry with Cauliflower Rice
Step 2
Heat the olive oil in a large pan or wok over medium heat.
Step 3
Add the sliced onion and cook for 2–3 minutes until slightly softened.
Step 4
Stir in the red and white cabbage, broccoli, sugar snap peas, and mushrooms. Cook for 5–7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
Step 5
Add the mung bean sprouts, ginger powder, and garlic powder. Stir well and cook for another 2 minutes.
Step 6
Pour in the tamari and mix until all the vegetables are evenly coated.
Step 7
In a separate pan, lightly sauté the cauliflower rice over medium heat for 3–4 minutes until warmed through.
Step 8
Serve the stir-fried vegetables over the cauliflower rice. Sprinkle with hemp seeds if desired.
