Cauliflower fried rice

This is completely flexible. Substitutes: rice for cauliflower, tuna for a fried egg on top at the end. Same principles as fried rice - add anything that’s withering in your fridge.

Instructions

Step 1
Prepare your ingredients. Slice the garlic clove, spring onions, coriander and chilli (if using)

Heat 1 tbsp of oil in a skillet over a high heat. To check the oil is hot, drop one cumin seed in to the oil. If it splutters, it is hot enough. Add the rest of the cumin seeds
Step 3
When the cumin stops spluttering, turn down the heat to medium. Add sliced spring onion. Fry for 1 minute, stirring regularly

Add the sliced garlic clove and sauté for another 30s

Add the tinned tuna, if using, and sauté for another 30s

Add the ground turmeric and chilli powder and stir through. Before you choke, quickly add the cauliflower rice

Cook for 3-4 minutes, stirring occasionally to prevent any sticking

Squeeze in half a lemon and sprinkle over coriander and extra sliced chilli. Turn off heat. Serve with yoghurt
