Preheat the oven:

Set to 450°F (230°C).

Pat the pork dry with paper towels. Mix olive oil, salt, pepper, rosemary, thyme, garlic, and paprika into a paste. Rub this mixture all over the meat.

Sear (optional but recommended):

In a hot skillet, sear the pork on all sides (2–3 minutes per side) until browned. This adds flavor and helps with a crispy crust.

Roast:

Place the onion, carrots, and herbs in a roasting pan. Set the pork on top. Pour the chicken stock into the pan.

Roast uncovered at 450°F (230°C) for 15–20 minutes to crisp the outside.

Then lower the temperature to 350°F (175°C) and roast for 1½ to 2 hours, or until the internal temperature reaches 145°F (63°C) for a juicy medium doneness.

Remove from the oven and let the pork rest for 10–15 minutes before slicing. This keeps the juices inside.
