Ingredients

1 cupshredded white cheddar cheese
½ cupfresh scallions
chopped, for garnish

Instructions
Step 1
Melt butter in a large pot over medium heat.
Step 2
Add chopped onion, garlic, celery, and green bell pepper. Sauté until soft.
Step 3
Add ground chicken, cumin, and cayenne pepper. Cook until the chicken is browned.
Step 4
Pour in chicken broth and bring to a boil.
Step 5
Reduce heat and let simmer for 20-30 minutes.
Step 6
Season with sea salt and black pepper to taste.
Step 7
Stir in shredded white cheddar cheese until melted.
Step 8
Serve hot with scallions and additional cheese as garnish.
