Chicken Marinade/Seasoning
Instructions
Step 1
Season the Chicken: In a bowl, toss the chicken pieces with the seasoning ingredients: chicken spice, paprika, and cayenne pepper. Set aside.
Step 2
Sauté Aromatics: In a large pot or deep pan over medium-high heat, add a little oil. Sauté the chopped onion until soft (about 5 minutes).
Step 3
Add Spices and Aromatics: Add the crushed garlic, crushed chillies, and bay leaves. Cook for about 1 minute until fragrant.
Step 4
Bloom the Curry Powder: Stir in the dry spices: tumeric, curry powder, Durban masala, leaf masala, coriander, and cumin. Cook for 1-2 minutes, stirring constantly, to 'bloom' the spices (this deepens their flavour).
Step 5
Add Tomato: Stir in the tomato paste and cook for another minute. Then, add the crushed tomato and the tsp sugar and mix well.
Step 6
Add Chicken and Liquid: Add the seasoned chicken pieces to the pot. Stir to coat the chicken with the spice and tomato mixture. Pour in enough water or stock (1-2 cups) to almost cover the chicken.
Step 7
Simmer: Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 30 minutes. Stir occasionally.
Step 8
Add Vegetables: After 30 minutes, add the mixed vegetables. Add salt and pepper to taste.
Step 9
Finish Cooking: Continue to simmer, uncovered or partially covered, for another 15-20 minutes, or until the chicken is tender and cooked through, and the vegetables are soft. The sauce should have thickened slightly.
Step 10
Serve: Remove the bay leaves before serving. Enjoy your delicious Durban-Style Chicken Curry!
