Instructions
Step 1
Chop or pulse salmon in a food processor until it’s finely minced but not a paste.

In a large bowl, combine the salmon, garlic, sun-dried tomatoes, basil, lemon zest, egg, panko, Parmesan, salt, and pepper.

Form into medium to large-sized meatballs (about 10–12).
Step 4
In a large skillet, heat olive oil over medium heat. Sear meatballs for 2–3 minutes per side until golden.
Step 5
Optional: Finish in the oven at 375°F (190°C) for about 10 minutes to fully cook through or simmer gently in sauce.
