2 lbsboneless skinless chicken breasts
cooked and shredded
3carrots
2Celery Stalks
1whole red bell pepper
1onion
1can corn
OR 1 cup frozen corn kernels
2 x 32 ozCans Crushed Tomatoes
or Diced
2 cupschicken broth
1 packettaco seasoning
salt
to taste
pepper
to taste
1 TblsCumin
1 Tbspminced garlic
sour cream
Suggested toppings
tortilla strips
avocado
shredded cheese
Instructions
Step 1
Chop all vegetables as desired. Saute in 1 Tbls olive oil, until softened and translucent
Step 2
Add tomatoes and chicken broth. Season to taste.
Step 3
Add shredded or diced chicken. Stir all together and simmer for 30-45 minutes
Step 4
Suggested toppings: sour cream, tortilla strips OR crushed tortilla chips, avocado, shredded cheese
