Instructions
Step 1
Prepare the Chicken: In a bowl combine olive oil, smoked paprika, garlic powder, thyme, cayenne, salt, and black pepper. Rub the mixture over the chicken thighs. Heat a skillet over medium-high heat and sear the chicken for 4 to 5 minutes per side until blackened and cooked through to 74°C (165°F). In the last minute of cooking, add lemon slices to the pan to char slightly. Top chicken with the charred lemon and parsley.
Step 2
Roast the Broccoli: Preheat the oven to 200°C (400°F). Toss broccoli with olive oil, Parmesan, breadcrumbs, garlic powder, salt, and black pepper. Spread evenly on a baking sheet and roast for 18 to 20 minutes, turning halfway, until crisp and golden.
Step 3
Cook the Carrots: On a separate baking sheet toss carrots with olive oil, honey, salt, and black pepper. Roast for 20 to 25 minutes until tender and caramelized, tossing halfway through.
Step 4
Assemble the Plate: Arrange blackened lemon chicken thighs with charred lemon slices, a portion of Parmesan-crusted broccoli, and honey-glazed carrots. Serve hot.
