Instructions
Step 1
Roast Tomatoes (20-25 mins at 200°C): Toss quartered tomatoes with 4 Tbsp Canola Oil, oregano, salt/pepper.
Step 2
Cook Pasta: Cook spaghetti until al dente, reserving 1 1/4 cups of pasta water.
Step 3
Sauté: Heat 5 Tbsp Canola Oil in a large skillet. Cook garlic and chilli flakes for 30-45 seconds (do not burn). Add prawns and cook for 2-3 minutes.
Step 4
Deglaze: Add Rosé Wine and reduce by half (about 30 seconds).
Step 5
Combine: Add roasted tomatoes, spaghetti, and 3/4 cup reserved pasta water. Toss for 1-2 minutes to form a glossy sauce.
Step 6
Finish: Remove from heat, stir in fresh basil and parsley. Serve immediately
