Ultimate Mac & Cheese

Instructions

Step 1
To make a roux, melt butter in a large saucepan over low heat. Whisk flour into melted butter, cook 10-15 minutes until a blond color, whisking constantly.
Step 2
Meanwhile, bring a pot of salted water to a boil & cook macaroni until just al dente--reserve some pasta water. Brown bread cubes in butter in a small skillet or cast iron. Add 1/2-1 tsp of garlic just before removing from heat. Remove from pan onto a paper towel-lined plate & set aside.
Step 3
In a small saucepan, add milk, garlic & bay leaf. Heat until warm. Pour milk mixture into roux gradually, whisking until smooth. (may not need all the milk) Bring just to a boil, then turn heat to low. You now have a bechamel.
Step 4
Add cheeses in sections to the bechamel & mix with a spatula. Add a splash of the pasta water. Keep mixing until cheese has melted, adding cooked macaroni. Next, add the salt, sherry, mustard & mozzarella & mix until combined.
Step 5
Add the mac and cheese to a cast iron pan, sprinkle with cheese (optional), then place under the broiler until bubbly brown. Remove from oven & top with croutons, crumbled chicken skin pieces & chives.
