Instructions
Step 1
Preheat your oven to 350°F.
Step 2
Line muffin tin with paper or silicone cups.
Step 3
In a large bowl, combine Flour, Oats, Cinnamon, Nutmeg, Baking Soda, Salt, Nuts & Fruit Medley.
Step 4
In a separate bowl, combine Eggs, Zucchini, Carrot, Oil, Syrup, and Vanilla. Add to the dry ingredients and stir until moistened.
Step 5
Spoon the batter into the muffin cups and bake for 25-35 minutes.
Step 6
The muffins are ready when a toothpick comes out clean.
Step 7
These muffins freeze well and are perfect for snacking.
