Instructions

Step 1
Chop onion, grate or finely slice carrot.
Step 2
Cook onion and carrot in air fryer 5 mins in olive oil. Chop in half tomatoes ready.
Step 3
Stir. Add cumin & turmeric (about 1/2 tsp each) & season. Add tomatoes. Add lime juice and cook 5 mins.
Step 4
Stir. Add spinach, cook 5 mins. Stir to distribute spinach. Chop cheddar ready for next step.
Step 5
Add chopped cheddar and coriander. Serve with a dollop of natural yogurt.
