Ingredients
2 servings
2Sweet Potatoes
peeled and cut into 1-inch cubes
2 tablespoonsavocado oil
4 Slicesbacon
pastured and nirate-free
1red onion
small, diced
1garlic clove
minced
1 teaspoonground cumin
½ teaspoonground coriander
½ teaspoondried oregano
½ cupcilantro leaves
chopped
fine sea salt
to taste
ground black pepper
to taste
Avocado
pitted and peeled
lime
cut into wedges
Instructions
Step 1
Heat oven to 425 F. place sweet potatoes on a sheet pan lined with parchment paper. Drizzle with avocado oil. Bake for 30 min.
Step 2
While the sweet potatoes are roasting, put the bacon into a cold skillet, then turn on the heat to medium-high. Cook the bacon on both sides until crisp and transfer to paper towel-lined plate. Add the onion, garlic, cumin, coriander, oregano, and half the cilantro to the skillet. Cook the onnions until soft, about 5 minutes.
Step 3
Add the sweet potatoes to the skillet. Season with salt and pepper. Cook, stirring occasionally, for 5 minutes.
Step 4
In a bowl, mash the avocado. Add a squeeze of line juice and combine.
Step 5
Divide the hash between two plates and crumble the bacon over the top. Sprinkle on the remaining cilantro. Spoon on a dollop of mashed avocado and accompany with remaining lime wedges.
