300gextra-firm tofu
1 Tbspdark soy sauce
1 Tbspmaple syrup
1 tspSesame oil
½ tspgarlic granules
½ tspOnion Granules
1 Tbspcornflour
For the ramen broth
1 pieceginger
thumb-sized, grated
2cloves garlic
minced
1 Tbspmiso paste
30gnatural peanut butter
1 TbspSoy sauce
500mlveg stock
200mlmilk
1pak choi
halved
125gsoba noodles

Instructions
Step 1
Place the tofu in a container, add sesame oil, dark soy sauce, garlic granules, and onion, and cornflour. Seal and shake well until coated in the marinade. Marinate for 15 minutes.
Step 2
In a deep frying pan or wok, heat 1 tablespoons of olive oil over medium heat. Add the marinated tofu and stir-fry until nicely caramelized on all sides. Remove the tofu.
Step 3
Make the ramen broth in the same pan: Add ginger, garlic, cook for 1 minute, and add miso, peanut butter, and soy sauce. Stir vigorously to combine. Add 100ml stock and stir until fully melted.
Step 4
bring mixture to boil, Add rest of vegetable stock and milk, lower heat add pak choi, and noodles, reduce heat, and let simmer for 4-5 minutes cook until soft.
Step 5
To serve, ladle the broth into bowls, top with fried tofu, spring onions, sesame seeds, and lime wedges.
