Step 1
If you are using a whole tamarind block, soak it in some hot water before soaking your daal.
Step 2
Rinse your toor dal in water before adding water to cover an inch above the dal, add tomatoes, turmeric, red chilli powder, and ginger. Mix well and cook on medium heat in a pot.
Step 3
Once cooked, use a mortar and pestle to mash the dal.
Step 4
Add coriander to the mixture before straining your soaked tamarind block. Once you have your tamarind liquid, add it back to the dal with your desired amount of salt.
Step 5
Place your pot or pan back on the stove and whisk the dal to mix evenly.
Step 6
In another pot or pan, add your neutral oil, mustard seeds, cumin seeds, dried red chilli, green chilli, garlic, red chilli powder, and curry leaves. Temper until fragrant.
Step 7
Once the mustard seeds pop, pour the hot liquid and spices into the pot with your dal. Stir and add in your chopped coriander.
Step 8
Serve with rice and raita.
