Soak glass noodles in water for 30 min

Combine pork, soy sauce, wine and sugar and marinate for 10 min

In bowl of water soak mushrooms until rehydrated. Drain and cut into 2.5 cm pieces

In non stick frying pan, heat oil over medium heat, add pork and fry for 30 seconds. Add mushrooms, stir fry briefly, add onions, carrots and stir fry for another minute. Add spinach and chives, mix and remove from heat, set aside

In small bowl, stir together all ingredients

On large non stick pan add noodles and sauce and stir fry until excess moisture has evaporated, add veg and pork mix stir fry for 30 seconds serve
