For the pork
For the bokkeum
100 gramdried wood ear mushrooms
baby spinach
oil
natural cooked
80 gramshiitake mushrooms
stemmed caps thinly sliced
200gonion
thinly sliced
100gCarrots
cut into matchsticks
chives
chopped
For the japchae sauce
Instructions
Step 1
Soak glass noodles in water for 30 min
Step 2
Combine pork, soy sauce, wine and sugar and marinate for 10 min
Step 3
In bowl of water soak mushrooms until rehydrated. Drain and cut into 2.5 cm pieces
Step 4
Cut spinach into 2.5 cm pieces
Step 5
In non stick frying pan, heat oil over medium heat, add pork and fry for 30 seconds. Add mushrooms, stir fry briefly, add onions, carrots and stir fry for another minute.
Add spinach and chives, mix and remove from heat, set aside
Step 6
In small bowl, stir together all ingredients
Step 7
Cook glass noodles after instruction
Step 8
On large non stick pan add noodles and sauce and stir fry until excess moisture has evaporated, add veg and pork mix stir fry for 30 seconds serve
