2tbsp parsley

Directions:
1. Whisk together eggs with cottage cheese
2. Prep all your ingredients
3. Heat a medium pan with olive oil
4. Add eggs and twirl pan to coat
5. Once they are almost set & can move freely on the pan place tortilla on top & flip
6. Add cheese, veggies & more cheese
7. Fold in half and cook on each side for 30 seconds
8. Remove from heat & enjoy
