Instructions

Step 1
Whisk together the coconut milk, red curry paste, garlic, and soy sauce into the casserole dish. Toss in a few stems of cilantro.
Step 2
Place frozen potstickers in 2 or 3 rows in the curry. Spoon some of the liquid curry onto the potstickers.
Step 3
Pour in the bok choy and/or mushrooms
Step 4
Bake uncovered at 400 degrees for 10 minutes. Open the oven and flip each potsticker, and bake for another 10 minutes.
Step 5
Top with green onions, chili crunch, and sesame seeds and serve on top of jasmine rice.
